The santoku knife, a real asset to your cutting equipment
This 18cm Kiritsukesantoku knife is a staple in Japanese kitchens. It's comfortable in the hand and can be used for a variety of practical purposes. With it, you can chop your fresh herbs to perfection, as well as your vegetables and pieces of meat. Of course, you mustn't use it to cut anything too hard, such as bones, pumpkin, wheels of cheese...
High-quality materials
This santoku knife has a damascened blade, i.e. it is constructed in several stages. First, there's a hard core, which forms the strongest part of the blade, maintaining its sharpness and influencing the knife's direct performance. On top of this core, alternating layers of stainless steel are applied. They envelop the core, protecting and balancing it.
For the Zuiun Kiwami range, here's how the damascus was constructed:
- The center of the blade is made ofSPG2 steel (also known as SG2). This alloy is the result of powder metallurgy (unlike solid steel). To create a powder steel, you need to master a complex process involving the grinding of metal particles and the gentle addition of other elements essential to the alloy. The whole is then compacted using hydraulic presses, then sintered (with the addition of a high-temperature heat treatment) to consolidate the whole. The structure of the steel is then more homogeneous, which is an advantage in terms of durability and resistance to the risk of chipping.
If we want to go into more detail, we can talk about the carbon content of this alloy: it is around 1.3%, which considerably increases the rigidity of the cutting wire. Thanks to this characteristic, you can sharpen it with precision, as the steel will hold a razor-wire finish. Reaching a hardness of -+63 HRC, the blade retains its sharp edge despite use.
The blade benefits from a special tempering process known as Sub-Zero treatment. This involves heating the steel to a temperature of -70C° in the space of a few seconds. The aim is to increase the blade's rigidity and perfect its cutting edge, which can more easily be brought to a razor-sharp finish.
All this is complemented by an ultra-resistant dark DLC coating. DLC stands for "Diamond-Like Carbon". This coating enhances the blade's strength and resistance to corrosion, while giving it a dark, contrasting appearance, enhanced by the mirror finish. The DLC coating also enhances the blade's glide through food, for even easier penetration.
The knife's cutting edge is Hamaguri-ba finished, i.e. shaped like that of a Japanese sword. This guarantees clean, precise cuts.
The handle is made from pakka wood, a tough composite material that blends laminated wood and resin, all heat-compressed. This material is often used in the kitchen for its resistance to temperature variations, humidity and impact. The visual effect is similar to that of natural wood, and you can see the original veins created by the blend of materials all along its surface.
The grey bolster ties in with the superb damascus blade and provides a light contrast to the handle.
For originality, the handle is cut with 7 facets. This unique shape fits perfectly into the palm of your hand, whether you're right- or left-handed.
A magnificent mosaic rivet has been applied to the top of the handle's gripping surface, for even more originality.
Your knife comes in an elegant, light, polished wooden box, embellished with a beautiful Japanese design. It's easy to give as a gift, and guaranteed to please!
Care: wash the knife by hand and dry it immediately with a soft cloth, before storing it away from moisture. In this way, you'll preserve its original appearance for a long time to come.
