This Cerax whetstone is fired at very high temperatures, making it more resistant to the risk of cracking. It's a durable whetstone, and also very easy to use.
Its #3000 grit is considered fine, so it is recommended for polishing the cutting edge, as it is a finishing stone.
To use:
Soak for 5 minutes before use. It is possible to reapply water to the surface of the stone during sharpening, when you feel it is necessary. You can do this directly by hand, or with a pipette.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.
After use, you can rinse the surface and clean it with a soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).
Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams, but this is perfectly normal.
To complement the stone:
A small white Nagura stone (7.2 x 1.7 x 0.9 cm) is supplied with the whetstone. It is used to create the famous slurry that facilitates the action of the stone. As already mentioned, it reinforces the abrasive power of the main stone, thus enhancing its performance.
The #3000 grit stone is glued to a white base to stabilize it during use. It also comes with a box that you can use for storage, as a sharpening stand when in use, or as a small basin for soaking the stone before use! The box also has a space for the Nagura stone, to prevent it getting lost. Its black feet are removable.
A few words about the manufacturer :
Suehiro is a Japanese specialist in professional sharpening stones. They develop practical, long-lasting stones that novices can even enjoy using, since stone sharpening can be impressive if it's never been done before.
Suehiro oversees every stage in the manufacture of its stones, from research and development to production.
Here are the main phases:
- Mixing and stirring ingredients in large vats
- Press each stone into a rectangular shape
- Allow shaped stones to dry for a short time
- Bake to set
- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
- Quality control before the stones are placed in the packaging
