The 9.47 knife was created by a Parisian Michelin-starred restaurateur, from a simple idea: to make a table knife with the same qualities as a folding knife. It's a simple, elegant knife with pure, timeless lines.
These knives have been entirely handcrafted by professionals, from assembly to finishing inPerceval's Thiers-based workshop.
First and foremost, this knife features a Sandvik 12C27 stainless steel blade, which is highly resistant to corrosion and wear, increasing its strength and guaranteeing long-lasting use. What's more, it offers excellent edge retention and long-lasting cutting performance.
The 11 cm handle, assembled with screws, is made from black polyacetal, a material that is highly resistant to impact, low temperatures and creep. However, these knives are not dishwasher-safe, as detergents (washing powder, rinsing liquid, etc.) create chemical reactions with the steel of the blades, leading to deterioration. We recommend that you simply clean them by hand with lukewarm water and a sponge, and then store them carefully to ensure a long life for your knives.
