The steel of Wusthof knives
Wüsthof uses a special steel alloy to which the brand gives an optimum hardness of 58° on the Rockwell scale:
X : Stainless steel
50 : 0.5% carbon - important for sharpness
Cr : Chrome - anti-corrosion
Mo : Molybdenum - gives good resilience V
Vanadium : - gives strength
15 : 15% chrome

The production of a Wüsthof knife :
A WÜSTHOF knife is produced in over 40 manufacturing phases, forged from a single piece of chromium-molybdenum-vanadium steel.

Current cutting performance tests carried out by the Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V. (German Research Association for Tools and Materials) in Remscheid confirm the quality-leading status of WÜSTHOF forged knives compared with the qualities of well-known brands of one-piece forged knives.
Comprehensive tests were carried out in accordance with DIN EN ISO 8442-5. WÜSTHOF knives have a considerably higher initial cutting performance (ICP = Initial Cutting Performance), and also retain it for a very long time (TCC = Total Card Cut).
WÜSTHOF forged knives with the new PEtec technology scored 20% better than the winners of the "Kitchen Knives" category tests carried out by the Stiftung Warentest (German Consumer Institute).
The technique:
The blades are measured by laser before sharpening.
Computer programs calculate the draw angle individually for each blade.
Precision robots then sharpen the blades on wet grinding wheels.
Finally, the knives are polished one last time on a special grinding wheel.
