High-performance VG MAX damascus blade

The blade of Tim Mälzer's Shun Premier santoku is based on a core of VG MAX steel, one of the highest-performance alloys in the VG family. Enriched with carbon for rigidity and chromium for resistance to oxidation, it achieves a hardness of around 61 HRC on the Rockwell scale.

This alloy also contains cobalt, tungsten, molybdenum and vanadium, ensuring excellent wear resistance, fine grain structure and sharpening precision. The resulting edge is durable, clean and perfectly controlled.

Hammered damascus for balance and non-stick properties

The VG MAX core is surrounded by thirty-two layers of alternating hard and softer steels. This damascus construction protects the core while balancing hardness and impact resistance, without making the blade flexible.

The surface of the blade is hand-hammered using the Tsuchime technique. This hammering lends a unique visual to each knife and enhances non-stick properties, making it easier to detach food when cutting.

An ergonomic, well-balanced walnut handle

The handle of Tim Mälzer's Kai Shun Premier santoku is made from walnut, a robust, durable wood. Its curved shape ensures a natural, comfortable grip, suitable for both right- and left-handed users.
