This 18cmsantoku knife is the multi-purpose Japanese knife by definition. It's the equivalent of a chef's knife, enabling you to perform the same type of cutting. The santoku knife is also ideal for chiseling, as its curved blade allows a natural rocking motion when cutting.
The blade's core is made of VG-MAX steel, one of the finest alloys in the VG series. It is based on the VG10 alloy, to which carbon has been added for rigidity, and chromium for resistance to oxidation. This gives it a strength of 61+-1 HRC on the Rockwell scale. This steel also features cobalt, tungsten, molybdenum and vanadium, for a result that's both tough and durable, with a fine grit that can be precisely sharpened for a long-lasting, high-performance edge.
This steel is then surrounded by 32 layers of hard and soft steels, the damascus method. These layers protect the steel and balance the ratio between hardness and flexibility of the alloy, keeping the knife rigid but less brittle in use (without making it flexible per se).
The top surface is hand-hammered when forged(a technique known as Tsuchime) to give it an original and unique look, and to enhance its non-stick properties (the hammering hollows and bumps act a little like honeycombs). In addition, all the knives in this series are checked by the experts at Seki, ensuring that they perfectly match their function and quality standards.
The walnut handle has been crafted to ensure sturdiness and ergonomics, so that every use is a pleasure! What's more, it's suitable for both right- and left-handed users, which is a plus! The curved shape sits naturally in the hand, and the engraved steel base adds balance to the knife (and a touch of originality!).
Last but not least, the knife's remarkable styling ensures both authenticity and modernity, between the wooden handle and the impeccably finished blade. It comes in a light-colored wooden box, making it an ideal gift (or treat yourself).
Wash by hand and dry after washing to keep it dry and moisture-free. Do not use the dishwasher to wash it.
