The universal knives in the series are positioned as intermediate models, capable of handling both vegetables and boneless meats. Their versatility makes them highly appreciated tools for everyday preparations.

The range also includes chef's knives, true pillars of the kitchen. Their longer, higher blades enable them to work efficiently on large quantities of food, whether vegetables, meat or fish.

There are also santoku-type models, recognizable by their wide, slightly curved blade. They are particularly effective for slicing, chopping and chiseling, thanks to their natural rocking motion.

A high-performance, long-lasting 1K6 stainless steel blade

All Kai Shoso blades are made from 1K6 stainless steel. This Japanese alloy, enriched with molybdenum and vanadium and with a carbon content of around 0.8%, offers excellent resistance to wear and corrosion.

The hardness of around 58 HRC on the Rockwell scale guarantees a long-lasting edge, while retaining appreciable sharpening ease. Each knife is sharpened in several stages before being put into circulation, to ensure optimum cutting quality from the very first use.

Hammered handle in 18/8 stainless steel and meticulous finishes

The handles of Kai Seki Magoroku Shoso knives are made entirely of 18/8 stainless steel, a grade renowned for its strength, corrosion resistance and impeccable hygiene. The blade is set into the heart of the handle, forming a particularly strong and durable one-piece structure.

The handle's hammered surface creates a modern, elegant look, while improving grip. Its ergonomic shape naturally hugs the palm, providing excellent balance and consistent comfort of use for both right- and left-handed users.

To complete the picture, the Kai logo and brand are engraved directly on the blade. These discreet markings underline the range's Japanese authenticity and bear witness to the care and attention to detail that characterize Kai's expertise.
