ACUTO440 stainless steel for durability and performance

The blade is made from ACUTO440 stainless steel, a corrosion-resistant alloy known for its durability. This steel contains carbon, chromium, vanadium and molybdenum. Carbon increases hardness, allowing the blade to reach approximately 59 HRC on the Rockwell scale, ensuring a long-lasting and efficient cutting edge.

Vanadium strengthens the steel structure and enhances impact resistance, while molybdenum and chromium significantly improve corrosion resistance. The result is a durable, stable and reliable blade suited for intensive professional use. The edge remains easy to maintain with a sharpening stone whenever required.

Sub Zero tempering and convex granton edge

To achieve optimal cutting performance, the blade undergoes Glestain’s Sub Zero tempering process. This technique involves heating the blade to high temperatures and then immediately cooling it to extremely low temperatures. Carried out in seven precise stages, this method refines the internal structure of the steel, enhancing rigidity and structural stability.

The convex cutting edge improves food penetration, allowing for clean, smooth slices without tearing delicate flesh. In addition, the granton edge reduces food adhesion to the blade, ensuring a smoother and more controlled cutting experience.

An ergonomic and durable pakkawood handle

The handle is crafted from black pakkawood, a composite material made of laminated wood and resin, compressed and heat-treated for enhanced strength. It combines the natural look of wood with the durability and moisture resistance of engineered materials.

Its Western ergonomic shape fits comfortably in the hand, whether you are right- or left-handed. A stainless steel bolster and three rivets secure the full tang blade firmly in place, ensuring optimal balance, stability and long-term reliability.

Care and maintenance

To preserve your Glestain filleting knife, wash it exclusively by hand using a non-abrasive sponge. Dry it immediately after cleaning and store it in a dry place. Avoid dishwashers and prolonged soaking in water to maintain both blade performance and handle integrity.
