A legacy of Japanese swords since 1918

Founded in 1918 by Matsujiro Kawamura, a direct descendant of the Kanetsugu sword smith, Kanetsugu is part of the great Seki cutlery tradition. For over a century, the brand has been developing kitchen knives in keeping with the principles inherited from Japanese swords: balance, precision and exacting sharpness.

The Zuiun series was created to celebrate the brand's 100th anniversary. Its name means "the cloud appearing as a happy omen", a symbol of renewal and technical perfection.

A core of powder-metallurgy SPG2 steel

The most distinctive feature of the Zuiun range is its core in SPG2 steel, a high-end powder-metallurgy steel. Unlike traditional cast steels, SPG2 is obtained by atomizing metal particles, then compacting them under high pressure before sintering at very high temperatures.

This process ensures an extremely homogeneous distribution of carbides in the steel matrix. The resulting microstructure is finer, more stable and more regular, improving wire holding, sharpening precision and wear resistance.

With around 1.3% carbon, SPG2 achieves a hardness of around 63 HRC on the Rockwell scale. This high level of hardness ensures an extremely fine cutting edge while maintaining excellent stability over time.

Damascus structure and Sub-Zero treatment

The SPG2 core is protected by several layers of softer steels forming a refined damask. This multi-layer structure absorbs mechanical micro-stresses and reduces the risk of breakage, while providing a unique wavy aesthetic on each blade.

Zuiun blades then undergo a Sub-Zero heat treatment. After the conventional quenching phase, the steel is rapidly lowered to around -70°C. This step transforms residual austenite into stable martensite, increasing the blade's internal rigidity and improving edge longevity.

The wire is then shaped according to Hamaguri-ba geometry, a convex profile inspired by Japanese swords. This shape allows progressive penetration of the food and limits friction during cutting.

A 7-facet technical handle for optimum control

The handle is made from Pakkawood, a composite material obtained by hot compression of laminated wood and resin. This composition offers excellent dimensional stability, enhanced resistance to humidity and greater durability than traditional solid wood.

Its exclusive 7-facet shape improves hand location and offers precise control when making fine cuts. A decorative mosaic rivet adorns the heel of the handle, while a black bolster ensures balance between blade and handle.

Each knife is delivered in a clear paulownia wood box, renowned for its lightness and natural moisture protection properties.
