Description

The Yanagiba knife Kai Seki Magoroku Kinju knife is recommended for delicate cutting of fish, thanks to its long, thin blade. It allows you to create beautiful sashimi, or top sushi in a few quick strokes.

We offer it in 3 different blade sizes: 18, 21 and 24cm :

- 18cm: blade size: 17.5cm; handle size: 13cm; overall size: 31.5cm; blade height: 2.8cm; blade thickness: 2.2mm; weight: 126g

The blade is made of 1K6 stainless steel, a resistant alloy enriched with molybdenum and vanadium and with 0.8% carbon, which achieves a hardness of 58 HRC on the Rockwell scale. This alloy offers a good balance between edge retention and ease of sharpening. Last but not least, its mirror-polished finish adds elegance.

The one-sided cutting edge is suitable for right-handed cooks.

The handle is made of Pakkawood, a composite material combining laminated wood and resin, all heat-compressed. The whole is resistant to both thermal and mechanical shock. It is also moisture-resistant. Its hexagonal shape fits perfectly into the palm of your hand (the top is rounded, while the bottom has ridges).

We recommend hand-washing, which is gentler on the knife over the long term.

Nice blade, very good cutting edge (could be further improved), well-made pakawood handle, I would have preferred an octagonal handle, this one has a slightly poorer grip. The big negative for me is the bolster, made of molded plastic, with a marked offset from the handle. In my opinion, the bolster on the wasaki black knives is better finished.
