This chef's knife is the ultimate all-purpose knife. It's a kitchen essential, enabling you to cut, chop, slice or chisel various types of food.
It comes in several sizes:
- 18cm model: blade 18cm; handle 12.5cm; overall size 31.5cm; blade height 4.1cm; blade thickness 1.8mm; weight: 124g
- 21cm model: 21cm blade; 12.5cm handle; 34.5cm total length; 4.6cm blade height; 1.8mm blade thickness; weight: 152g
- 24cm model: 24cm blade; 12.5cm handle; total length 37.5cm; blade height 5cm; blade thickness 1.8mm; weight: 166g
The blade is made from a 3-layer San Mai structure. It's a simple damascus, which you can see along the cutting surface, thanks to a small wave representing the meeting of the different steels.
The blade core is made of AUS8 Japanese stainless steel, enriched with molybdenum and vanadium, 2 essential elements in an alloy. Vanadium is recommended for impact resistance, while molybdenum enhances corrosion resistance. AUS8 steel also contains 0.8% carbon and 14.5% chromium. The former increases the alloy's hardness, while the latter is essential for oxidation resistance. When the various elements mentioned above are combined, the result is a high-performance, easy-to-maintain alloy.
The alloy's outer layer is made of SUS1A-1 steel, further enhancing corrosion resistance.
The handle is visually a perfect continuation of the blade, thanks to its all-steel styling. It is made of SUS304 stainless steel for easy maintenance, while remaining light and pleasant in the hand. Its curved shape fits snugly into your palm, whether you're right- or left-handed. In addition, its ridged surface reduces the risk of the knife slipping in your hand.
The knife comes in a plain black cardboard box. Don't hesitate, it's a great gift for a seasoned cook or a passionate amateur!
We recommend hand-cleaning and immediate drying with a soft cloth. Once the knife has been washed and dried, you can store it in its box, away from moisture, or in a Bag, block or drawer.
