Let's discover the technical features of these 3 kitchen knives:
The blade
The blade features a 10Cr15CoMoV stainless steel core. This high-grade steel has already earned an international reputation for its durability and sharpness (it can withstand a razor-sharp finish, for example).
It contains around 1.05% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids repeated sharpening.
Compared to French or German knives, the hardness of Wusaki knives is higher. As stated, this hardness is directly linked to the carbon content of the alloy, which has a direct impact on the knife's edge retention and quality.
Once the core has been shaped, it is surrounded by 67 layers of damascus. Damascus is the age-old process of skilfully superimposing different layers of steel (alternating between softer and harder alloys) around the core of the blade. In principle, the hard steel reinforces the knife's already inherent solidity, while the soft steel adds a slight suppleness (making it less brittle without making it flexible).
Damascus is also visually pleasing, with waves rippling across the cutting surface, for a breathtaking visual effect (and it's unique to every knife!). The top of the blade has been press-hammered, creating unique patterns on each blade. Beyond its aesthetic appeal, hammering is appreciated for increasing the knife's non-stick properties (a bit like honeycombing).
For even greater authenticity, the brand name and range have been laser-engraved on the blade. The blade benefits from a mirror-polished finish, for an impeccable look, while becoming more resistant to corrosion (as polishing flattens the surface of the steel to make it less porous).
Sharpening
The cutting edges of these 3 knives have been worked to a "V" shape, so that they penetrate food without forcing (their fibers are not broken). Final sharpening is done by hand, on a strip of leather. They are worked at a cumulative angle of 30° (i.e. 15° on each side of the wire). The result is formidable: you'll feel it from the very first use!
The handle
One of the highlights of the Wusaki Damascus 10Cr knife is the handle, made from olive wood, sanded and then treated for softness and comfort. This noble wood's warm appearance contrasts perfectly with the cold finish of the steel. The veins on each knife are unique: guaranteed cachet! What's more, olive wood has a distinctive fruity scent!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
It has been designed in an original, ergonomic shape, to fit naturally into the palm for maximum comfort of use. In this way, the thumb and forefinger can retain their full strength with each use, for firm, marked control of the knives. Finally, it should be noted that Wusaki handles are slightly longer than average, to suit all hand sizes. The base engraved with the Japanese character"Tiger" gives the knives an accomplished finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an extra touch of elegance: attention to detail is taken very seriously at Wusaki!
The Wusaki Damascus 10Cr knives will give your cutting equipment a new lease of life: they combine materials and colors perfectly to become exceptional pieces! With their sleek yet sophisticated look, they're sure to seduce the most demanding of cooks! The box containing the knives is a beautiful, high-end black case. It features 3 thermoformed slots designed to hold and lock the knives in rigid foam. This elegant case makes it easy to give as a gift. Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. This province is historically renowned for its knife-making expertise. Wusaki expertise is entirely governed by French manufacturing standards established for professionals in the sector.
For care, we recommend gentle hand-washing in lukewarm water with a neutral soap. You can then wipe the knives with a soft cloth and store them in a dry place.
When washing, try to keep the handles as dry as possible, as wood does not like to get wet. From time to time, you can also wipe them with a soft cloth soaked in olive oil, to add shine and protection.
Please note: when you receive your knives, the blade is lightly coated with protective oil. Simply wash them before 1st use to remove it.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or briefcase!
