The Sabatier Éléphant brand offers high-quality kitchen knives. The Ideal Forgé range is manufactured in the workshops of the Thiers Issard cutlery factory in Thiers, France.
This tomato knife has a 13cm micro-toothed blade. The serrations allow you to delicately cut through the thin skin of tomatoes without damaging the flesh. The knife is also suitable for cutting fruit such as kiwi. The blade is made from 4116 stainless steel, which contains chromium, vanadium and molybdenum, making it resistant to corrosion and impact. Stainless steel 4116 also resists wear and deformation.
The blade is hand-forged into a full tang shape. Hot forging gives the blade this shape. It is then passed through two oil baths (quenching and tempering), which fix the steel molecules together for increased strength.
Finally, the knife blade is passed over a grinding wheel equipped with leather rollers, which sharpen the blade and give it its cutting edge. As a result, the blade has a hardness of 55HRC, making it easy to maintain on a daily basis.
The tomato knife's handle is made of black nylon, a synthetic known in the kitchen for its high hygiene and strength. The handle is pressed against the blade by 3 aluminum rivets, making the knife even more robust.
The knife's round bolster is also made of aluminum. It gives the knife a well-balanced, lightweight grip. The knife's thin guard ensures safe use, as it prevents your fingers from slipping on the blade.
