Description

A handmade Japanese knife from Takefu

The 24 cm YuKurosaki Gekko San Maï chef's knife is hand-forged by Yu Kurosaki, master cutler from Japan's Takefu Knife Village. Designed for elegant slicing, this gyuto knife offers ultra-precise cutting on meat, fish and vegetables.

High-performance blade and exceptional steel

The 24 cm blade uses San Maï construction: a central core of HAP40 powdered steel laminated between two protective layers of softer steel. This steel, enriched with 1.3% carbon, achieves a hardness of 65 HRC on the Rockwell scale, offering edge retention 3 to 5 times superior to traditional steels. Finishes combine polishing and sandblasting, enhanced by kanji engravings and an aesthetic wire wave, for a unique visual effect.

A comfortable traditional handle for this Japanese kitchen knife

The oak wood handle, with its classic octagonal shape, ensures an ergonomic grip suitable for both right- and left-handed users! Solid and well-balanced, it complements the blade perfectly for prolonged use and smooth cutting. The wood has been traditionally lacquered in the Urushi style for an extra touch of authenticity.
