A precise and versatile Fujin universal Japanese knife
The Fujin 15cm SG2 all-purpose Japanese knife is hand-forged by Yu Kurosaki in Echizen, Japan, at the famous Takefu Cutlery Village. It features the emblematic visual signature of the Fujin range, inspired by the Japanese wind god: textured hammering that evokes the movement of air on steel.
With its 15cm blade, this all-purpose knife is remarkably easy to handle. It is the ideal intermediary between a pantry and a chef: vegetables, fruit, herbs, small pieces of meat or fish... It allows precise, rapid gestures, particularly suited to fine cuts and meticulous work.
A San Maï blade in SG2 forged in Echizen
The 15cm blade is based on a San Maï structure, a traditional Japanese design consisting of a hard central core enveloped by two softer layers of steel. This structure makes full use of the high-performance steel in the center, while reinforcing the blade's overall stability. The core ensures cutting finesse, while the outer layers help absorb the mechanical stresses of repeated movements.
The core is made of Japanese SG2 powder-metallurgy steel. This process guarantees a homogeneous microstructure and uniformly distributed fine carbides. With around 1.3% carbon and enriched with molybdenum and vanadium, SG2 steel delivers a particularly fine, long-lasting cutting edge. The regularity of its internal structure ensures a clean, precise cut.
The blade is hand-forged by Yu Kurosaki. Forging refines the steel's grain and improves its compactness before heat treatment. After controlled quenching and tempering, hardness reaches around 63 HRC. This high level ensures excellent wire retention and reduces the frequency of sharpening if maintenance is regular.
The wire'sflat cutting edge offers a progressive geometry suited to fine cuts. Food penetration remains fluid, with good lateral control despite the compact size. Fujin's hammered finish creates a slight non-stick effect by limiting the contact surface with moist food. Engraved kanji recall the artisanal origin of the piece and the identity of the blacksmith.
A traditional handle in balanced sandalwood
The handle is made from sandalwood, a wood appreciated for its pleasant feel and density, which is well suited to short blades. On a 15cm size, this choice contributes to excellent handling and natural balance in the hand.
Its octagonal shape allows ambidextrous use. The edges provide precise tactile cues for effortless visual adjustment of the cutting angle. This geometry favors control during delicate cuts.
A black Pakka wood bolster joins the blade to the handle. Stabilized and resistant to humidity, this material secures the assembly over time while providing a sober, elegant finish.
The overall impression of precision is particularly appreciated for work requiring finesse and speed.

Our advice on use and care
Wash your knife by hand with a soft sponge and neutral soap, then dry immediately. Do not put in the dishwasher or soak in the sink. Avoid cutting on hard surfaces such as stone or glass.
Use a wooden or synthetic cutting board. For sharpening, use a stone suitable for hard steels, with 1000 to 3000 grit for routine maintenance. Regular, light sharpening will preserve the quality of your blade's cutting edge.
Yu Kurosaki, craftsman at Takefu Cutlery Village
Based in Echizen, Fukui prefecture, Yu Kurosaki works for the renowned Takefu Cutlery Village, a group of craftsmen who perpetuate traditional Japanese techniques while integrating contemporary high-tech steels.
After apprenticing with experienced local blacksmiths in the early 2000s, he developed an instantly recognizable identity. His blades are distinguished by original textured hammering and a demanding mastery of powder-metallurgy steels. Each knife is forged by hand, then precision-trimmed to optimize the steel's internal cohesion before the hardening and tempering stages.
Yu Kurosaki's collections, notably the Fujin series, are appreciated for their coherent blend of distinctive aesthetics and cutting efficiency. The Yu Kurosaki all-purpose Japanese knife embodies this quest for harmony between traditional craftsmanship and technical performance.
