The steel used for these knives is Ginsan Silver 3, one of the finest in modern cutlery. It is enriched with carbon, to ensure long-lasting sharpness, but also has a high chromium content, to make it more resistant to oxidation. This steel thus combines the best of both worlds, namely the advantages of carbon and stainless steel knives. The knife handles are made from walnut wood, entirely hand-carved by an expert in the field. Kagekiyo Tedukuri knives are oval-shaped, while Kagekiyo Hiroba knives are square-shaped with filed edges and grooves running along the surface. The choice is yours!
