Bread knife: just for cutting bread?
Bread knife features
As you may have already noticed, a conventional kitchen knife is not the best choice for cutting bread. Indeed, the blade of a traditional knife tends to crush the bread and massacre its crust.
The bread knife is best suited to slicing bread quickly and cleanly. Its long, serrated blade is suitable for all types of bread: sliced bread, brioche, soft or hard crusted breads. It makes slicing multigrain bread, traditional baguettes and farmhouse loaves child's play.
The length of the bread knife blade generally varies between 20 and 26 cm. It can be straight or curved, with small or large teeth. Its serrations ensure that no strong pressure is exerted on the food during cutting, with only the teeth doing the work, in a sawing motion.
In this way, the bread knife 's sharpness is not limited to cutting this everyday foodstuff.

Ideal for cutting food that's hard on the outside, but soft on the inside, the bread knife is suitable for cutting :
- All types of bread, with hard or soft crusts
- Brioche, tart or sponge cake
- Pizzas and bruschettas
- Vegetables, such as celery, eggplant or tomatoes
- Meat cuts, such as roasts (a smooth, sharp blade is recommended)
Unlike smooth-bladed knives, these will retain their sharpness for a very long time, so sharpening is almost never necessary.
