This 23cm Japanese bread knife from KAI's Shun Classic range is exceptionally well designed.

KAI Shun Classic knives are designed for elite chefs and lovers of high-quality Japanese knives.

The blade of this knife is particularly sharp thanks to the quality of its steel and the 32-layer damascus process (which mixes layers of hard and soft steel, giving the blade hardness and flexibility).

In addition, its VGMAX steel core (a specific composition concentrated in carbon and cobalt) will ensure long-lasting strength, and develop a particularly high resistance to corrosion.

The blade has also been worked and shaped to obtain a convex edge, and then sharpened by hand, offering you incomparable cutting performance. What's more, it achieves a strength of around 61 HRC on the Rockwell scale, so you'll need to sharpen it far less often.

The pakka handle is a noble material composed of compressed wood and resin. It is guaranteed to be antibacterial, resistant to temperature differences and waterproof. Also, its particular "D" shape has been adapted to perfectly fit the shape of your hand, offering you ergonomics and less fatigue during prolonged use. What's more, it represents the perfect blend of authenticity, with its dark wood, and practicality, with its resin enhancing its hygienic aspect.
