The butcher's knife is an utensil designed for meat professionals. It's a rigid knife, indispensable to all good butchers and charcutiers, for cutting carcasses with ease. Also known as a cleaver, this knife owes its name to its resemblance to an A5-size sheet of paper.
The weight and size of the butcher's blade, combined with the ample movement of the arm, give it great cutting strength, capable of breaking bones and joints with a hard blow. Blade length usually varies between 17 and 30 cm, with a height of 7 to 12 cm and a weight of 400 to 900 grams. Some models feature a straight-backed blade, others a blade that rises upwards at its tip. The latter are known as "Swiss" shaped and enable precise cuts, even where there is little space between the bones. For the toughest carcasses, there are knives with reinforced blades.
The cleaver features an ergonomic handle for safe cutting. It's easy to grip and comfortable to use. Finally, when used flat, this knife enables you to crush foods such as pods or dried fruit.

Using the cleaver 
Initially used for butcher's work, the cleaver can be used for many kitchen tasks. For example, it is ideal for :
- slicing large bony pieces of meat, joints and tendons
- Breaking up carcasses
- Flatten meats
- Chop meat, vegetables or herbs
- Crush garlic cloves, shallots and dried fruit
Like any knife, the cleaver or butcher's blade needs to be sharpened to maintain its cutting edge. You can sharpen it regularly with a butcher's knife. In addition, always use a cutting board or butcher's block to preserve the edge of the blade for longer.
