A nakiri designed for cutting vegetables

The nakiri is a Japanese knife with a high, rectangular blade, specially designed for cutting vegetables and herbs. This Satake Tsuchime model features a 17 cm blade, perfectly suited to fast, even vertical cuts. This format enables precise slicing of cabbage, leeks, zucchinis or herbs, while maintaining excellent control of the gesture. As with all thin-blade Japanese knives, it is best to avoid cutting food that is too hard to preserve the integrity of the cutting edge.

A high-performance, easy-to-maintain stainless steel blade

The blade is made of stainless steel enriched with molybdenum and vanadium, two elements that enhance resistance to shock and corrosion. With a hardness of around 57 HRC on the Rockwell scale, this knife offers an excellent compromise between edge retention and ease of sharpening. It is therefore perfectly suited to everyday use, both for amateur cooks and for those wishing to learn about Japanese knives without excessive maintenance requirements.

The knife is laser-sharpened so that it's ready for use immediately upon receipt. When the need arises, stone sharpening or regular maintenance with a gun ensures a long-lasting, efficient cutting edge.

Tsuchime finish and Japanese aesthetics

The upper part of the blade features a hammered finish known as Tsuchime. This traditional Japanese finish creates slight indentations on the surface of the blade, limiting the adherence of wet or greasy food when cutting. In addition, the blade has been polished for a polished look and is engraved with kanji, adding a touch of authenticity and elegance typical of Japan.

A comfortable, well-balanced magnolia handle

The handle is made from magnolia wood, a species traditionally used in Japan, notably for sword scabbards. Its light, creamy color is light, soft to the touch and resistant to humidity. Its oval shape naturally hugs the palm of the hand, guaranteeing excellent comfort during prolonged cutting sessions and limiting fatigue.

A black synthetic bolster joins the blade to the handle. It contributes to the knife's overall balance and enhances the feeling of control during use. To ensure the long-lasting preservation of your Satake Tsuchime nakiri, we recommend washing it exclusively by hand with a non-abrasive sponge, drying it immediately after washing and storing it in a dry place. Do not wash in a dishwasher or soak for long periods.
