Founded in 1971 by engineer Akira Honma, the Glestain brand is based on a clear philosophy: combine science, technology and craftsmanship to achieve optimum performance. From the outset, the brand has relied on direct feedback from chefs and restaurants to continually improve its products. Even today, Honma san personally passes on its techniques and innovations to carefully selected craftsmen.
ACUTO440 steel and Sub Zero tempering
Home Series blades are made from ACUTO440 stainless steel, an alloy renowned for its corrosion resistance and durability. Its composition of carbon, chromium, vanadium and molybdenum enables a hardness of around 59 HRC on the Rockwell scale. This level guarantees an efficient, long-lasting cutting edge, while remaining relatively easy to maintain with the stone.
Carbon contributes to the blade's overall hardness, while vanadium enhances its resistance to micro-shock and provides a slight elasticity. Molybdenum and chromium enhance oxidation resistance. Each blade benefits from a seven-stage Sub Zero tempering process, which consists of heating the steel and then cooling it to very low temperatures. This process refines the metal's internal structure and increases edge stability.
A convex cutting edge and functional cells
The blade features a convex cutting edge for better food penetration. This geometry ensures clean, precise cuts with minimum effort. The dimples present on certain models reduce food adherence during cutting, particularly for moist or slightly oily products.
A stainless steel handle with an original design

Care and maintenance
To preserve the performance of your Glestain knife, we recommend washing it exclusively by hand with a soft sponge. Dry immediately after cleaning and store in a dry place. Avoid the dishwasher and prolonged soaking.
