Description

The Fileting knife is perfect for preparing fish! Its large, fine blade lets you produce effortlessly even slices. The blade slips easily under the skin of fish for easy lifting of sole fillets.

The Glestain Home Series knives have been designed to meet the needs of amateur cooks. These Japanese kitchen knives stand out for their efficiency and ergonomic handles, offering you optimum cutting capacity and comfort!

In 1971, highly qualified engineer Akira Honma founded the Glestain knife brand with the ambition of combining science and cutting-edge technology to achieve remarkable performance. From the brand's inception, Glestain has adopted a direct approach, interacting directly with restaurants and chefs to raise its profile. This strategy aims to gather valuable feedback from kitchen professionals, contributing to the constant improvement of Glestain knives.

Honma san personally passes on its manufacturing techniques and innovations to carefully selected craftsmen, reinforcing the reputation of Glestain knives among kitchen professionals.

A high-performance, practical blade for many uses

The blade of this Japanese knife is made of ACUTO440 stainless steel, a robust alloy that is highly resistant to corrosion. This steel is frequently used in the manufacture of Glestain knives: it is composed of carbon, chromium, vanadium and molybdenum.

First and foremost, carbon is an essential element that increases the blade's hardness, since a high level of hardness ensures an effective, long-lasting cutting edge. The hardness of this blade, for example, is 59HRC on the Rockwell scale, giving it remarkable cutting capacity and excellent edge retention.

Vanadium and molybdenum are also elements that increase the steel's hardness. Vanadium also adds elasticity to the blade, making it more resistant to micro-shocks. Finally, molybdenum and chromium enhance the blade's resistance to corrosion.

This steel is high-performance, tough and durable, making it ideal for regular use! What's more, it's easy to work with a Sharpening stone when necessary.

This Japanese knife has undergone Sub Zero hardening to give it a remarkable sharpness. This process consists of placing the blade at very low temperatures, just after the heating phase. This stiffens the blade and creates a fine, homogeneous structure. This technique is carried out by Glestain in 7 steps that require both time and precision.

For even greater efficiency, the blade features a convex cutting edge. With this shape, a convex cutting edge penetrates food better, ensuring clean, precise cuts.

The blade also features ahoneycomb design that prevents food from sticking to the sides when cutting.

Ideal grip in the kitchen

The handle of this Glestain knife is made of durable, solid stainless steel. Its original design adds character to your Japanese knife, while guaranteeing optimum sturdiness. The handle is complemented by a stainless steel bolster that gives your kitchen knife optimum balance and a perfect grip.

With its Western shape, this Japanese Fileting knife fits the hands of all cooks! This Glestain knife offers an ergonomic grip for perfectly controlled handling, especially for prolonged use.

To care for your Japanese knife, wash it exclusively by hand with a non-abrasive sponge. Once washed, wipe immediately with a clean cloth and store in a dry place. Do not use the dishwasher or leave your knife to soak in the sink.
