The chef knife is a highly versatile model, ideal for making a variety of cuts in the kitchen! Whether for mincing meat, slicing vegetables or chopping herbs, this gyuto knife offers a wide range of uses.
The Glestain Home Series knives have been specially developed to meet the needs of amateur cooks. These Japanese kitchen knives stand out for their performance and ergonomic handles, offering optimal cutting capacity and ideal comfort, saving time in the kitchen.
In 1971, engineer Akira Honma founded the Glestain knife brand with the aim of fusing science and cutting-edge technology to achieve remarkable performance. From the brand's inception, Glestain has taken a direct approach, interacting with restaurants and chefs to increase its popularity. This strategy aims to gather valuable feedback from kitchen professionals, contributing to the continuous improvement of Glestain knives.
Mr. Honma himself passes on his manufacturing techniques and innovations to carefully selected craftsmen, reinforcing the reputation of Glestain knives among catering professionals.
The blade of this Japanese chef's knife is made from ACUTO440 stainless steel, a solid alloy renowned for its resistance to oxidation. It is often used in the design of Glestain knives and is composed of carbon, chromium, vanadium and molybdenum.
Carbon is the essential element that increases the hardness of an alloy, since a higher hardness confers a better cutting edge. As a result, the hardness of this blade reaches 59HRC on the Rockwell scale: it offers very good edge retention and an efficient cutting edge.
Molybdenum and vanadium also play a role in the alloy's hardness. Vanadium adds elasticity to the blade, improving resistance to micro-shocks. Molybdenum and chromium, on the other hand, enhance corrosion resistance.
This is quality steel for high performance, durability and strength! What's more, its cutting edge is easy to sharpen with a stone when the need arises.
For even greater efficiency, this knife has undergone Sub Zero tempering, a technique that involves cooling the blade at very low temperatures immediately after the heating phase. This process stiffens the blade and makes it more durable by creating a fine, homogeneous structure. This method is applied by Glestain in 7 different stages, which require time and precision.
The cutting edge is further accentuated by its convex shape. This allows the blade to penetrate food more easily for clean, precise cuts.
Last but not least, the blade featureshoneycombs that create air bubbles to prevent your food from sticking to the surface of your knife when cutting.
The handle of this Japanese kitchen knife is made of stainless steel, ensuring optimum strength and durability. Its original design adds character to your Japanese knife! It is complemented by a bolster, also in stainless steel, which adds balance to ensure an ideal grip.
Its Western shape makes it suitable for the hands of all cooks. It offers an ergonomic, comfortable grip for perfectly controlled handling, especially during prolonged use!
To care for your Japanese kitchen knife, wash it exclusively by hand with a soft sponge. Once washed, wipe immediately with a clean cloth to remove all traces of moisture and store in a dry place. Do not put in the dishwasher or leave to soak in the sink.
