Kanetsugu: over a century of cutlery excellence

The Kanetsugu brand was founded in 1918 by Matsujiro Kawamura, a descendant of the famous Japanese sword-maker of the same name. A direct heir to the forging traditions of Seki, the historic capital of Japanese cutlery, Kanetsugu has been perpetuating its know-how, combining rigorous craftsmanship and technological innovation, for over 100 years.

The Zuiun Kiwami series embodies this philosophy. "Zuiun" means "the cloud appearing as a happy omen", while "Kiwami" can be translated as "ultimate" or "extreme". A name that perfectly reflects the high technical and aesthetic standards achieved by this exceptional range.

A versatile Kiritsuke with an assertive character

This 21cm Kiritsuke knife combines the versatility of a chef's knife with the slender aesthetics of traditional Japanese blades. Its distinctive angled tip is reminiscent of the sabers of yesteryear, enabling precise work when making fine cuts, clean incisions or delicate finishes.

It is equally suited to slicing meats, chopping vegetables, chopping herbs or preparing fish. Its geometry offers a wide cutting range while maintaining excellent tip precision. Like all top-of-the-range knives, it should be reserved for non-hard, non-frozen foods.

A damascened blade in 63 HRC SPG2 powdered steel

The blade is built around a core of powder-metallurgy SPG2 (also known as SG2) steel. Unlike traditional solid steel, powder steel is obtained by grinding metal particles to which the precise alloying elements are added, before being compacted under hydraulic presses and then sintered at high temperature.

This process produces an extremely homogeneous structure, with a fine, regular grain. The result is a more stable steel, more resistant to micro-chipping and capable of withstanding very precise sharpening.

With around 1.3% carbon, SPG2 achieves a hardness of around ±63 HRC on the Rockwell scale. This high hardness guarantees outstanding cutting performance over time. The wire can be finely worked to obtain a long-lasting razor-sharp edge, particularly appreciated in professional kitchens.

The core is then protected by several layers of softer steels forming a damask. This damascus pattern provides a balance between rigidity and flexibility, limiting the risk of breakage while offering a unique visual effect. Each blade features distinct wavy patterns, a strong aesthetic signature of the Zuiun Kiwami range.

Sub-Zero treatment and high-performance DLC coating

The blade features a Sub-Zero heat treatment. After the heating phase, the steel is brutally cooled to around -70°C. This process enhances the complete transformation of the metallurgical structure, increasing rigidity, stability and sharpness.

The blade then receives a black DLC (Diamond-Like Carbon) coating. This ultra-resistant surface treatment further enhances surface hardness, reinforces corrosion resistance and limits food adherence. The glide is smoother, the penetration into the flesh clearer, and the aesthetics more contemporary thanks to the contrast between the deep black and the visible damask pattern.

The cutting edge benefits from a Hamaguri-ba finish, inspired by Japanese swords. This slightly convex geometry improves food penetration and reduces friction, guaranteeing clean, precise cuts.

The range's signature 7-facet Pakkawood handle

The handle is made from Pakkawood, a composite material of laminated wood and hot-compressed resin. It combines the elegance of natural grain with resistance to humidity, temperature variations and impact.

Its original 7-facet shape offers remarkable ergonomics. This geometry naturally hugs the palm and ensures stable finger positioning. Control is precise, even during prolonged cutting.

A gray bolster ensures a harmonious transition between blade and handle. A decorative mosaic rivet enhances the end of the handle, adding a distinctive aesthetic signature to the whole.

To preserve all the qualities of your knife, we recommend washing it exclusively by hand. Use a soft sponge, dry immediately after cleaning and store away from moisture. To preserve the structure of the steel and the beauty of the handle, do not wash in the dishwasher or soak for long periods.
