Description

This Japanese chef' s knife is handcrafted by Tsunehisa Cutlery, a renowned Japanese company made up of a small team of experts specializing in the manufacture of quality knives!

The chef's knife, also known as the gyuto knife in Japan, is a versatile model that enables you to make a wide variety of cuts. Whether for mincing meat, slicing vegetables or chopping herbs, it's the perfect knife for the job! However, it is not recommended for use on very hard foods such as bones or frozen foods.

A Damascus knife with a refined blade

The blade of this handcrafted knife is damascened, a traditional Japanese technique that consists of surrounding a core of rigid steel with several layers of softer steel. This gives your blade an ideal balance between hardness and flexibility, while ensuring optimum core protection.

For the core,440C steel has been selected. This robust alloy contains around 1% carbon, a key element that increases the blade's hardness. With a hardness of 59HRC on the Rockwell scale, this knife guarantees excellent edge retention and long-lasting cutting performance.

The blade's "flat" shape ensures greater strength. More generally, a flat edge is aesthetically pleasing and easy to reproduce for maintenance.

Alloy 440C also contains around 17% chromium, offering greater resistance to corrosion. However, due to its high carbon content, it is essential to take special care of the blade to prevent oxidation.

To complete the damascus finish, several layers of softer stainless steel surround the core, giving your Japanese knife a certain suppleness without making it flexible. This reduces the risk of breakage during use. In addition to enhancing flexibility, these layers also protect the core of your blade.

Damascus also has an undeniable aesthetic advantage! The superimposition of different steel layers creates random patterns unique to each Yuzo Hamono knife. These patterns add a real visual signature!

Finally, the surface of the blade has been subtly hammered, adding an extra touch of elegance. This hammering creates delicate patterns, evoking splashes of water on the blade.

A solid wooden handle for great durability

The handle of your handcrafted Japanese knife is made of smoked oak wood, a species that is both robust and durable. Thanks to its high density, it effectively resists shock, vibration and humidity, minimizing the risk of warping. This baikoku oak has undergone a smoking process that gives it a darker hue, while highlighting its natural grain, adding character and authenticity to your Yuzo knife!

The octagonal-shaped handle is suitable for all cooks, whether right- or left-handed! It offers an ergonomic grip and excellent maneuverability, particularly appreciated during long cooking sessions.

To ensure a watertight seal between blade and handle, wood paste has been applied to fill any gaps, preventing water or food residues from seeping through.

As for the care of your damask knife, it's important to wash it exclusively by hand with a soft sponge, avoiding getting the handle wet. After washing, be sure to dry it immediately to remove any moisture, then store it in a dry place. It is important not to put it in the dishwasher or let it soak in water.
