This Japanese santoku knife has been handcrafted by Tsunehisa Cutlery, a Japanese company renowned for its know-how, supported by a small team of experts specializing in the manufacture of top-of-the-range knives!
Like the chef's knife, the santoku knife is a versatile tool, ideal for a multitude of cuts. It's ideal for mincing meat, slicing vegetables and chopping herbs with precision. Its typically Japanese shape allows you to perform a rocking motion when cutting. However, it is not designed for cutting very hard foods, such as bones or frozen products.
A damascus knife with a sturdy blade
Its damascus blade, made using a traditional Japanese technique, combines a core of rigid steel with several layers of softer steel. This construction ensures an optimum balance between hardness and flexibility, while effectively protecting the blade's core.
The core of your blade is made of 440C steel, a robust alloy containing around 1% carbon, guaranteeing increased hardness. With a hardness of 59HRC on the Rockwell scale, this Japanese knife offers outstanding edge retention and long-lasting cutting performance.
The blade features a "flat" cutting edge for added strength. As well as being aesthetically pleasing, this shape is easy to reproduce when sharpening, making it easy to maintain your Japanese kitchen knife!
Alloy 440C contains around 17% chromium, offering greater resistance to corrosion. However, its high carbon content requires special care during maintenance to avoid oxidation and preserve the qualities of your blade.
Next, several layers of softer stainless steel surround the rigid steel core. This structure gives the knife a certain suppleness without making it flexible, thus reducing the risk of breakage during use. These layers also serve to effectively protect the blade core.
As well as being functional, damascus offers a unique aesthetic dimension! The superimposition of the different steel layers creates random patterns, making each Yuzo Hamono knife truly unique and recognizable thanks to this distinctive visual.
Finally, the surface of the blade has been delicately hammered, adding an extra touch of elegance. This subtle hammering creates refined patterns reminiscent of splashing water, reinforcing the handcrafted character of the blade.
The Japanese kitchen knife with ambidextrous handle
The handle of this handcrafted Japanese knife is made from smoked oak, a species renowned for its strength and durability. Its high density makes it highly resistant to shock, vibration and humidity, limiting the risk of warping. Baikoku oak has undergone a smoking process, giving it a darker hue that highlights its natural grain, adding an authentic, elegant touch to your Yuzo knife.
Thanks to its octagonal shape, the handle is designed to suit both right- and left-handed users. It offers a comfortable grip and optimum maneuverability, ideal for prolonged use in the kitchen.
To ensure an ideal seal between blade and handle, wood paste has been applied to fill any gaps, preventing water and food residues from seeping through.
When it comes to caring for your damask knife, it's important to clean it only by hand with a soft sponge, while avoiding immersing the handle. Once washed, wipe immediately with a dry cloth to remove all traces of moisture, and store in a dry place. It is essential not to put it in the dishwasher or let it soak in water.
