The De Buyer Inocuivre convex sauté pan makes perfect juices and sauces!
This convex sauté pan is indispensable for reduction cooking. It lets you reduce sauces to concentrate them. This is made possible by its small-diameter base, which heats up quickly, and its wider rims, which ensure perfect evacuation of moisture.
Here are the dimensions of the 3 sauté pans available:
- ø 16cm : height: 6cm ; bottom thickness: 1.5mm ; capacity: 0.9L ; weight: 0.9kg
- ø 20cm : height: 7cm; base thickness: 1.5mm; capacity: 1.7L; weight: 1.38kg
- ø 24cm : height: 8cm; base thickness: 2mm; capacity: 2.9L; weight: 1.93kg
The sauté pan is made of 90% copper and 10% AISI 304 stainless steel. The copper makes up the outer layer and ensures excellent heat diffusion throughout the pan. Thanks to the 1.5 or 2mm bottom, depending on the model, heat is distributed smoothly throughout the pan, ensuring exceptional cooking results.
Stainless steel covers the inside of the pan. This makes it extremely hygienic and easy to clean. Stainless steel eliminates the need to re-tarnish copper. The small amount of stainless steel in the pan does not affect the copper's capacities.
This sauteuse can be used on all burners except induction hobs. If you are equipped with one, you can still use the sauteuse via a special induction relay disc. It can also be used in the oven if you wish to finish cooking or reheat a preparation.
A French-curved cast-iron handle completes the sauteuse. Cast iron ensures a sturdy sauté pan with long-lasting durability, and the curved shape makes it easy and comfortable to handle. The handle is firmly riveted to the pan.
This sauté pan has a simple design that goes perfectly with copper and cast iron. It's a traditional sauteuse as it used to be, and it's synonymous with good simmering recipes. De Buyer has applied a traditional smooth polish to give it a superior mirror finish. This sauteuse is an elegant piece to display in your kitchen.
Care and cleaning
When heating the sauteuse, take care not to exceed two-thirds of the power of your plates. Overheating will deform the bottom of the pan. For mixing and serving, use only wooden or silicone utensils to avoid scratching the pan.
The sauté pan should be washed by hand, using washing-up liquid and a non-abrasive sponge. Chlorine, detergents and dishwashers are to be avoided, as they will leave indelible marks on the sauté pan, and the handle may oxidize.
With heat, the sauté pan naturally changes color. To revive its shine, you can apply a little De Buyer copper polishing paste.
