With the De Buyer copper jam pan, making traditional jam has never been easier!
The copper basin allows you to make jams, jellies or fruit preserves by bringing them to the boil with sugar. It's an essential traditional cooking utensil for jam-making.
Available in 2 sizes:
- ø 38cm: bottom diameter: 27cm; bottom thickness: 1.2mm; capacity: 9L; weight: 1.5kg - heavy
- ø 40cm : bottom diameter: 28.5cm; bottom thickness: 1.7mm; capacity: 11L; weight: 3.4kg - extra heavyweight
This pot is made of copper, an excellent heat conductor. Copper facilitates the tempering of sugar and produces ions that create chains between the fruit's pectin molecules. The result is a jam that's less liquid and smoother.
Copper also ensures great control over the jam cooking environment. The natural colors of the fruit are preserved and do not turn brown.
The jam pan has a wide, flat base for perfect stability on all heat sources, especially gas burners. It should be noted, however, that this pan cannot be used on its own on induction hobs. A relay disc is required for this purpose.
The angles of the bottom are also rounded, so you can easily reach every corner of the bowl when mixing. The entire preparation is easy to work with.
The edges of the bowl are rolled and open, making it easy to transfer the jam into the jars. As they don't protrude, there's no risk of injury and cleaning is easy.
Two sturdy cast-iron handles make this basin easy to handle. They ensure easy and safe handling of the bowl, as they are securely fastened with rivets.
To clean the basin, we recommend soaking it in hot water for half a day, to loosen any jam that may have stuck to it. Then wash with a soft sponge, hot water and vinegar, before drying with a cloth.
It's also advisable to apply special copper polishing paste from time to time. Copper naturally changes color on contact with heat. This step revives its shine.
