Thanks to their copper material, they distribute and diffuse heat ideally for controlled baking. Your cannelés will be crisp on the outside and soft on the inside.
Before using your molds for the first time, make sure they are sealed. To do this, gently wash and rinse your molds with a cloth. Then apply a coat of greasing agent (ideally release spray) and place the empty molds in a very hot oven (200/230°c) for 20 minutes. Finally, remove the molds from the oven and allow them to cool before wiping them dry with paper towels.
This step must be carried out the first time and at each cleaning stage, as it is essential for perfect removal of the cannelés from the molds.
It is recommended not to wash the cannelé molds between uses. In fact, copper cannelé molds cannot be washed to preserve the fine film of grease that ensures excellent demolding. You can, however, rub the outer surface of the mold with a mixture of flour, egg white and white vinegar to restore its shine.
