Thisparing knife offers a manageable size for precise cutting tasks with its 10-cm blade. The smooth, straight-backed blade is made of 4116 NITRO+ stainless steel, enriched with nitrogen. This steel grade achieves a hardness of between 58 and 60 HRC and features a 12.5° cutting angle on each side. The result is a precise cutting edge, long-lasting performance, and easy sharpening.
The nitrogen enrichment improves the steel’s hardness as well as its corrosion resistance. It is therefore well-suited for repeated use in the kitchen. This paring knife is entirely forged from a single piece of steel heated to approximately 1200°C, then stamped. The blade, bolster, and tang thus form a uniform, solid, and reliable unit. Its balance reduces fatigue and ensures a comfortable grip:
Use the blade on a wooden cutting board or a soft surface to preserve its edge. Avoid frozen foods, bones, and excessively hard surfaces. After each use, hand-wash this Sabatier knife with a soft sponge, then dry it immediately. Dishwasher use is not recommended. Store it in a knife block, on a magnetic strip, or in a protective sheath.
