The SABATIER Idéal Bleu Abysse santoku knife combines the French craftsmanship of Thiers with the practicality of Japanese blades!
Slicing, mincing, or chopping becomes a breeze, whether you’re preparing vegetables, fish, or a nice cut of meat.
With its 18-cm straight-backed blade, this santoku knife can be used for a wide variety of tasks. Its shape makes it easy to make even cuts, and its sharp edge is equally suited for vegetables, herbs, fish fillets, and cuts of meat.
The blade is made of nitrogen-enriched 4116 NITRO+ stainless steel. This alloy offers good corrosion resistance, a hardness of 58 to 60 HRC, and long-lasting cutting performance. The nitrogen also improves initial cutting performance, while the carbon content helps maintain the blade’s sharpness. The knife is easy to maintain and simple to sharpen when necessary.
The indentations carved into the blade reduce the suction effect. Slices come off more easily, allowing you to work quickly without turning every cucumber slice into a miniature sticker.
Entirely forged from a single piece of steel that is heated and then stamped, the knife forms a seamless unit comprising the blade, bolster, and tang. This design enhances its durability. Its ergonomic POM handle is resistant to moisture, temperature fluctuations, and wear. The three brass rivets ensure a secure attachment, while the knuckle guard at the end of the handle improves grip safety.
Wash this knife by hand with a soft sponge and a suitable dish soap, then dry it immediately. Dishwasher use is not recommended to preserve the blade’s sharpness, the handle, and the rivets. Use a wooden or soft plastic cutting board; do not cut directly on a hard surface. To maintain an effective cut, regularly sharpen the blade with a suitable sharpening steel or whetstone.
Since 1812, Lion Sabatier has been crafting its knives in Thiers, the historic birthplace of French cutlery. The brand combines forging techniques, industrial precision, and meticulous finishes to create kitchen utensils designed to assist with everyday food preparation. The Idéal Bleu Abysse line embodies the hallmarks of French knives while incorporating a silhouette inspired by Japanese knives.
