More compact than a traditional chef’s knife, this 15-cm model is easy to use for mincing shallots, chopping herbs, cutting vegetables, or slicing small pieces of meat. Its slightly curved blade naturally follows pushing and rocking motions. It allows for quick chopping without having to lift the knife completely between each cut.
Made from nitrogen-enriched N4116 Nitro+ stainless steel, the blade has a hardness of 58 to 60 HRC and a cutting angle of 12.5° on each side. This alloy offers excellent edge retention, a sharp initial cut, and superior corrosion resistance compared to standard stainless steel. It is also easy to sharpen, making maintenance simple over time.
This Sabatier chef’s knife is entirely forged from a single piece of steel heated to 1200°C and then stamped. The blade, bolster, and tang thus form a uniform, sturdy, and well-balanced unit.
The ergonomic POM handle fits comfortably in the hand, while the overall balance reduces fatigue during extended use. Its design echoes the iconic features of the Idéal chef’s knife, with a particularly elegant blue finish.
Use this knife on a suitable cutting board—made of wood or synthetic material—to preserve its edge. Avoid hard surfaces such as glass or stone. After each use, wash the blade by hand with a soft sponge and dry it immediately. Dishwasher use is not recommended. Regular sharpening with a suitable sharpening steel or whetstone helps maintain a sharp edge.
