The Ryda Knives A-30 carving knife has been developed to support demanding users in long, precise cuts. Its slender silhouette and careful balance make it an ideal ally for slicing meat cleanly, without tearing fibers or forcing the gesture.
This meat carving knife is equally suited to the discerning amateur and the professional looking for a fluid, precise tool that's easy to handle. Its blade length naturally lengthens the movement, resulting in even slices and a visually clean cut when serving. Its light weight contributes to an immediate feeling of control.
The 20.5cm blade adopts San Maï architecture, with a 3-layer steel assembly. The hard central core is enveloped by two softer upper layers of 316 and 316L stainless steels, which contribute to the overall strength while protecting the cutting core.
At the center is a Japanese AUS-10 stainless steel, enriched with approximately 1.05% carbon. This composition ensures a fine, clean and responsive cutting edge, which is particularly useful for slicing cooked or raw meat with precision. The blade has also been cryogenically treated to further strengthen the steel's structure and improve edge retention. It thus achieves a hardness of around 60 HRC, a relevant level for maintaining good cutting performance while keeping maintenance accessible.
Theflat grind allows the blade to enter the material cleanly, helping to produce even slices without excessive pressure. This is a real advantage with meat, where a clean cut preserves texture and ensures a neat presentation. The satin finish gives a sober, elegant appearance, while making traces of use less visible.
The rounded heel is also important: the index finger nestles naturally in the hollow near the bolster, improving control of the knife. This design is equally suited to elongated movements and more controlled gestures, resulting in reduced fatigue during long cutting sessions.
Weighing just 150g, this model promotes smooth, continuous and precise cutting. It relies more on the fluidity of the gesture than on raw power.
The handle is made from stabilized walnut wood, a material appreciated for its natural elegance and greater resistance over time. Vacuum-treated, the wood gains in strength in the face of humidity and variations, making it particularly interesting in a kitchen environment.
Each piece has a unique grain, reinforcing the knife's singular character. Walnut also provides a pleasant feel in the hand, with a warm sensation that contributes to comfort of use.
Its slim, slightly domed shape has been designed to provide a firm hold without overloading the grip. The knife remains firmly in place, which encourages precise, continuous movements, particularly when following a cutting line on a piece of meat.
Close to the bolster, the handle is highlighted by a bevelled green and gold ring, adding visual finesse. The stainless-steel bolster adds to the overall balance, while the beveled, mosaic-tipped base adds a particularly meticulous finish.
Wash your knife exclusively by hand with a soft sponge and a non-aggressive detergent, then dry it immediately after cleaning. To preserve both the cutting edge and the materials of the handle, do not wash in the dishwasher or soak for long periods.
For best performance, use a wooden or synthetic board. Regular sharpening on a stone adapted to the AUS-10 will maintain a clean, pleasant cut.
With the A-30 series, Ryda Knives targets cooks looking for knives that are technical, balanced and pleasant to use. This range has been developed to meet the expectations of discerning amateurs and professionals who place as much importance on precision as on ease of handling.
The idea is not just to offer knives that perform well on paper, but to create models that immediately give good sensations in the kitchen. Controlled weight, studied ergonomics, choice of steels and meticulous finishing: the A-30 series is designed to deliver a fluid, stable and consistent experience from one knife to the next.
