The Japanese King Deluxe 1000 grit whetstone is the ultimate whetstone. Its grain makes it useful for almost all types of steel, whether hard or soft.
King stones are made in Osaka, Japan.
Its #1000 grit is considered the medium grit, and it's even said that if you had to choose just one stone, it would be a stone with this precise grit! It can be used to roughen the edge of a knife with a high HRC, which would otherwise start to lose its sharpness, while it can be used to lightly polish the edge of a knife with a low or medium HRC (which won't need to go up to very high grits to get a nice finish, as it won't last long with such a high level of polish anyway).
It is suitable for sharpening many different tools, including kitchen knives, outdoor knives, scissors, razors, mandolins etc.
How to use it
First, soak the stone in water for 10 minutes. Keep it moist throughout the sharpening session to optimize its performance.
The hand holding the handle should have thumb and forefinger on the blade to ensure stability. Three fingers of the other hand should hold the blade to distribute pressure evenly. The angle of sharpening should generally be 15° to 20°, followed by constant forward and backward strokes.
When the edge is towards you, apply more pressure when you push the knife than when you pull it back towards you. In the opposite direction, do the opposite (more pressure when bringing the knife towards you).
Clean the edge of the knife often enough during the operation. To find out if one side is sharp, test with your finger: touch the other side of the edge. If it's rough, you can move on to sharpening the other side (but don't cut yourself!).
After sharpening, run the knife under hot water to clean it, then dry it thoroughly. You should leave your stone to air-dry, and not put it in the sun to make it go faster, as this could damage it.
