Compact precision inspired by Scandinavian design
Discover the Ryda ST650 Damascus paring knife, a compact model designed for fine, precise, everyday cutting. Designed inSweden and part of the ST650 range, it's the result of 6 years of development, with in-depth research into the balance between performance, ergonomics and aesthetics.
Inspired by Nordic forests, this range combines clean lines and carefully selected materials. This 9.5cm Damascus knife is perfectly suited to precision work: peeling, carving, chiseling or cutting small foods with control. Its small size makes it easy to handle, while maintaining excellent cutting quality.
Powdered steel blade for precise work
The 9.5cm blade features a damascened structure composed of 73 layers of steel. It is built around a core of ST650 powder steel, surrounded by 36 layers of 316 and 316L stainless steel on each side, for a total of 72 outer layers. This assembly, combined with controlled heating, results in a unique damascus pattern while reinforcing the blade's strength.
ST650 powdered steel has been developed to deliver a fine, precise and even cut, particularly appreciated on small foods. Its ultra-fine composition guarantees a good balance between performance and stability. The blade also benefits from cryogenic treatment, which improves the internal structure of the steel and increases its resistance to wear. As a result, it reaches around 63 HRC, allowing you to space out sharpening intervals and maintain an effective cutting edge every day.
Theflat cutting edge facilitates penetration into food, ideal for peeling or making meticulous cuts without forcing. The mirror finish prevents residues from sticking to the blade, making it easy to clean after use.
A handle designed for control and comfort
The handle is made from French olive wood, selected according to grain to guarantee a unique finish. Each piece is shaped by hand, giving it an authentic look. Olive is a dense wood appreciated in the kitchen for its resistance to humidity and its stability over time. It has a pleasant feel, enhancing comfort during repeated handling. Its structure limits the absorption of liquids, contributing to long-lasting use.
The original curved shape enhances knife control. The little finger is naturally positioned at the heel, ensuring a stable grip. This allows you to work with precision while reducing fatigue, even during prolonged use.
The handle is complemented by two green and one gold ferrules, adding an elegant aesthetic touch. The stainless steel bolster improves overall balance, while the bevelled mosaic base offers a neat finish.
