Description

A high-performance nakiri for controlled cutting

Discover the Ryda ST650 damascus nakiri knife, a model designed to deliver clean, even cuts on vegetables. Designed inSweden and part of the ST650 range, it is the fruit of 6 years of development, with the aim of offering a knife that is efficient, comfortable and visually stunning.

Inspired by Scandinavian forests, this series combines sleek design with carefully selected materials. This Ryda ST650 kitchen knife is perfectly suited to slicing, dicing or chopping vegetables with precision. Its high blade makes it easy to guide cuts, while offering good comfort of use.

Damascus blade for clean, even cuts

The 18cm blade features a damascened structure composed of 73 layers of steel. It rests on a core of ST650 powder steel, surrounded by 36 layers of 316 and 316L stainless steel on each side, for a total of 72 outer layers. This process produces a solid blade while revealing a unique damascus pattern.

ST650 steel is designed to deliver an even, precise cut, ideal for vegetables. Its ultra-fine composition is kept secret, but guarantees a good balance between performance and stability. Cryogenic treatment strengthens the steel's internal structure and improves its resistance to wear. With a hardness of around 63 HRC, the cutting edge performs better for longer, allowing you to extend the time between sharpenings.

Theflat cutting edge enables clean cuts without crushing food, which is particularly appreciated for preserving the texture of vegetables. The mirror-polished finish reduces the adherence of residues and facilitates cleaning after use.

Olive wood handle for lasting comfort

The original curved shape of the handle improves grip and control. The little finger is naturally positioned at the heel, ensuring optimum stability. This allows you to work with precision while reducing fatigue, particularly during long preparation sessions.

It is made from French olive wood, selected according to grain to guarantee a unique finish. Each piece is shaped by hand, reinforcing its authentic appearance. Olive wood is renowned for its resistance to humidity and its stability over time, two important qualities in the kitchen. It offers a pleasant touch, enhancing comfort during repeated cutting. Its structure limits the absorption of liquids, contributing to good durability.

Two green and one gold ring embellish the handle, adding an elegant aesthetic touch. The stainless-steel bolster enhances the knife's balance, while the bevelled mosaic base adds a neat finish.

Using and caring for your Ryda kitchen knife

Wash your knife by hand with a non-abrasive sponge, then dry immediately. It is not dishwasher-safe, nor is it intended for prolonged soaking in the sink. Use a wooden or synthetic cutting board to preserve the cutting edge.

To maintain the edge, use a sharpening stone suitable for hard steels. Regular sharpening ensures a clean cut.
