The blade of this chef's knife is made of carbon steel , giving you tenfold sharpness. In fact, thanks to its carbon content, the knife's edge is finer and stronger, increasing its cutting capacity. However, care must be taken to avoid any traces of oxidation on the cutting surface (see tip at the bottom of the page).

This is a forged blade, meaning that it has been fashioned from a single piece of steel. This is shaped by high heat and a press to give it its final form. This process calls for unique know-how, and promises high-quality knives with a perfect finish.

You'll feel the forging when you take the knife in hand: it will be denser, fuller and more balanced!

The handle is made of black POM (a solid polymer used for kitchen Utensils ). It provides optimum ergonomics and long-lasting durability. This strength is accentuated by the 3 brass rivets, which give the whole knife a pleasant balance.

Finally, the sober look of these knives will suit all tastes. A straight blade, a sober handle, refined colors: Ideal Carbone 100% forged knives will please everyone. Their design is, in fact, the original drawing chosen by the company for the creation of these knives.

"A word of advice on care: once you've washed your knife, wipe it dry immediately before storing it, to preserve it over time! Carbon tends to oxidize easily. To avoid this, never put your knife in the dishwasher or soak it in the sink. Grease it after each wash to do its blade good."

Blade delivered covered in grease ... a week later, I understood why ... oxidized blade! Disappointing on such a site!
Answer: Hello, It seems you made a mistake ordering the knife, which is part of Sabatier 's "Carbon" range and not the "Stainless" range. All carbon steel knives are oxidizable, which is why they are delivered greased. The advantage of carbon steel knives is that they are sharper and easier to sharpen, but they are very sensitive to corrosion, forming a patina over time. We recommend coating the blade with mineral oil or grapeseed oil, for example, before storing the knife. Halfway between a chef' s knife and a paring knife, this is the format I find most useful. Of course, like all carbon steels, it oxidizes. But if you work it a little (a good pass through the rifle is enough, including when it comes out of the box, as the original cutting edge is average), it's razor-sharp and gets the job done. If you prefer stainless steel, take a look at Sabatier nitro steel(edonist, etc.), which cuts a little less well but doesn't oxidize.
