This 20cm chef's knife is a work of art. Here are the main features that make it an unforgettable piece:

Its blade has an SG2 steel core: this is a special steel powder with a fine, high-density structure that enables it to incorporate more particles into its alloy. This gives it an extreme hardness that enhances its cutting qualities. It is also more resistant to rust than the already robust VG10.

This special core is then surrounded by 160 superimposed layers of hard and mild steel (80 on each side). Thanks to this assembly of various layers, the knife blade offers the perfect combination of hardness and flexibility, and reaches 63 HRC on the Rockwell scale, which is very rare on the cutlery market. Japanese knives have an average HRC of 61. This particular knife will keep its sharp edge longer.

In addition to this already exceptional steel combination, the knife's edge has been sharpened to an angle of 30° (i.e. 15° on each side), whereas the basic angle of a Japanese knife is 34°. Needless to say, just how sharp it will be!

Its engraving is entirely hand-carved by a master cutler. He uses a punch to shape the characters, which he then integrates with a light tap of his hammer. His skill allows him to add an extra touch of authenticity to the knife.

The handle of this knife contributes to its overall harmony. Made from canvas micarta, it is extremely durable. Quite simply, you'll be able to use it for years without it moving a millimeter.

Composed of 40% resin and 60% linen, this composite material is extremely durable and resistant to temperature variations. It can withstand heat of up to 150°C! It is also highly resistant to moisture. Because of this capacity, micarta cannot shrink, preventing any gaps from forming between the blade and micarta. What's more, this special material has been approved by the American FDA (Food and Drug Administration) for use in professional kitchens.

The 3 rivets that complete it add to its already high strength.

It's important to note that to maintain its beauty, you can wash it gently by hand and wipe it dry immediately afterwards.

I love to cook, so I wanted to treat myself, and now I have! I've started to equip myself with the masterpiece: the Chef's knife. This utensil is really pleasant to handle and cuts to perfection. As stated in a previous comment, I'm apprehensive about sharpening... My only regret is that I didn't buy the paring knife (12cm) and the slicing knife on the site's anniversary (9% discount, not insignificant on such large sums).

I bought this knife as a gift for my father, as much for the pleasure of the eyes as for a use that will not be intensive. I saw that I had hit the nail on the head! I'm not qualified to judge the quality, but apparently it's very, very good. Fast, careful delivery.

Very beautiful objet d'art, pure beauty, perfect balance, sharpness like nothing I've ever seen. I think the price is in line with the quality of the steel and the work of the craftsmen or rather artists.I'm an amateur in the kitchen, I wanted to treat myself, it's very nice but it's almost too much for my level, so I dread the moment of sharpening because to find the original edge when you're not a pro or a connoisseur warned, I think you'll have to get up early.So I'd advise amateurs like me who want to treat themselves to the Zen, mon, ran or juste gou ranges from Yaxell, because you'll always get quality, efficiency and beauty at a more reasonable price.
