This 20cm chef's knife is a concentrate of efficiency: its blade features unique technical and visual characteristics.
First of all, it has a core of VG10 steel, which is a high-end, very expensive steel. Its specific composition (1% carbon, 15% chromium, 1% molybdenum, 0.2% vanadium and 1.5% cobalt) makes it extremely robust, and consequently very sharp (the wire being thinner). It achieves a hardness of 60HRC on the Rockwell scale.
This core is surrounded by 36 alternating layers of hard and soft steel (18 layers on each side): this is the damascening process. This goldsmith's technique is used to ensure the blade's perfect blend of strength and suppleness.
Finally, the top of the cutting surface is hammered, creating a delicate alchemy with the damascened layer. The micro-alveoli created by the hammering will enable you to cut your food to perfection, as it will stick less to the surface.
The handle of this knife contributes to the overall harmony of the piece. Made from micarta canvas, it is ultra-durable. Quite simply, you'll be able to use it for years without it moving a millimeter.
Composed of 40% resin and 60% linen, this composite material is extremely durable and resistant to temperature variations. It can withstand heat of up to 150°C! It is also highly resistant to moisture. Because of this capacity, micarta will not shrink, preventing any gaps from forming between the blade and the micarta. What's more, this special material has been approved by the American FDA (Food and Drug Administration) for use in professional kitchens.
Last but not least, the 2 rivets join the parts of the handle, making this knife a truly solid piece of equipment.
To care for it, wash it gently and wipe it dry immediately afterwards to preserve all its splendor. Indeed, while the damascening is made of stainless steel, the VG10 core contains a high carbon content, which makes it more susceptible to corrosion. If the blade is not damp, it will retain all its splendor.
