This 12cmUniversal knife lets you cut, peel or chop medium-sized fruit and vegetables. It's easy to handle, and its fine blade fits effortlessly everywhere!
What makes a Super Gou knife so exceptional?
First of all, its blade has a core of SG2 steel, a special powdered steel with a fine, high-density structure that allows it to incorporate more diverse particles into its alloy. This gives it greater hardness, which enhances its cutting qualities (the wire is harder, so the basic sharpening process is more thorough). It is also more resistant to humidity than VG10, which is already very good in its field.
Next, the SG2 core is protected by 160 superimposed layers of hard and soft steel (80 on each side). Thanks to this assembly of layers, the knife blade offers the perfect combination of hardness and slight suppleness, reaching 63 HRC on the Rockwell scale. As a result, the blade stays sharp longer.
Finally, the knife's cutting edge has been cut at an angle of 30° (i.e. 15° on each side), whereas the standard angle for a Japanese knife is approximately 34°. The cutting edge is therefore highly efficient.
The engraving is entirely hand-crafted by a master cutler. He uses a punch to shape the characters, which he then integrates with a light tap of his hammer. His deft touch adds an extra touch of authenticity to the knife.
The handle is made of canvas micarta, a material composed of 40% resin and 60% linen. It is durable and resistant to temperature variations. It can withstand heat of up to 150°C! It is also highly resistant to moisture. Because of this capacity, micarta cannot shrink, preventing any gaps from forming between the blade and micarta.
What's more, this special material has been approved by the FDA , making it suitable for use in professional kitchens. The 3 rivets that complete it add to its already high strength.
The knife is gently cleaned by hand, then wiped dry immediately after use to preserve its beauty over time.
Finally, we can't overlook its unique style. Its damascus is incredibly fine, and the shine of the polished blade adds to its elegance. Hand-engraving and a stainless steel base topped with the brand logo add that extra touch of authenticity...
