San Maï construction in high-performance VG2 steel
Heptagon UTO knives feature a blade built according to the traditional San Maï method. This structure rests on a central core of hard steel, enveloped by a layer of softer, folded-over stainless steel. The result is two different steels, but three visible layers.
The blade core is made of Japanese VG2 steel, produced by steelmaker Takefu. This stainless steel contains around 0.7% carbon, making it stiffer than many standard Western steels. It also contains around 14% chromium, significantly improving corrosion resistance.
This hard core ensures long-lasting sharpness while remaining easy to sharpen. The softer outer steel protects the core and reduces the risk of chipping during daily use.
The superposition of steels is visible at the cutting edge in the form of a fine, random wave. The blade surface is hammered, creating a strong aesthetic contrast and helping to limit food adherence. The slightly satin finish adds a neat, professional touch.

An original, ergonomic heptagonal handle
The special feature of this range is its 7-faceted handle, hence the name Heptagon. This specific geometry offers excellent control and natural finger positioning. Suitable for both right- and left-handed users.
The handle is made from Pakkawood, a composite material combining laminated wood and hot-compressed resin. It retains the natural look of wood while offering greater resistance to humidity and temperature variations. The black bolster, also in Pakkawood, ensures a harmonious transition with the blade.

The Kanetsugu Heptagon UTO series includes several models to cover all kitchen needs. There's a versatile 15cm utility knife for fruit, vegetables and small cuts of meat, a 17cm santoku for versatile slicing and chopping, a 20cm chef's knife for large preparations, and a 21cm serrated bread knife for thick crusts.
A set of 3 knives is also available, grouping together the universal, chef and bread models, enabling you to equip yourself immediately with a coherent, high-performance selection.
Maintenance
Hand-wash with a soft sponge and mild detergent. Dry immediately after cleaning and store the knife away from moisture. Avoid dishwashing and prolonged soaking.
