The kanetsugu uto knife has a core of VG2 Japanese steel. This is produced by the renowned steelmaker Takefu. This stainless steel has a carbon content of around 0.7%, giving it appreciable rigidity (when the average Western knife is around 0.5%). In addition, the alloy contains around 14% chromium, making it more resistant to corrosion. It sharpens easily when needed.
