This Japanese knife features a so-called San Maï blade: a hard core surrounded by softer layers on either side of its surface to create optimal balance and protection. It is thus composed of 2 different steels divided into 3 layers (the core and the folding top layer).
The Heptagon Uto knife features a core of Japanese VG2 steel, produced by the renowned steelmaker Takefu. This stainless steel contains 0.7% carbon, giving it rigidity (by comparison, a Western knife contains around 0.5%). What's more, the composition of this steel contains around 14% chromium, making it more resistant to corrosion. With a hardness of 58HRC on the Rockwell scale, sharpening is easy.
A layer of softerstainless steel covers this core to protect it and make it more flexible, thus offering greater resistance to blows.
You can see the superimposed layers of steel on the bottom of the blade: they form a randomly patterned wave that follows the cutting edge.
For added contrast and originality, the surface of your knife's blade is hammered. It is also lightly satin-finished for a flawless finish.
The handle of this Kanetsugu knife is made of pakka wood (also known as pakkawood), a composite material that combines resin and laminated wood, which are then joined together by heat compression. With the unique veins formed on your knife, it's a material that resembles natural wood. The bolster, meanwhile, is also made of black pakkawood.
The handle is ergonomically designed for a light, comfortable grip. Its 7 facets echo the name of the range: it has a heptagonal shape. Very practical, it is suitable for both right-handed and left-handed users.
To care for your knife, we advise you not to soak it in the sink, but to wash it by hand with a non-abrasive sponge and mild detergent. Wipe dry immediately and store in a dry place.
