The Kanetsugu brand has been around for decades, and has therefore acquired extensive know-how in the cutlery world. Their knives are made in Japan, so you can benefit from Japanese quality in the kitchen. Renew your kitchen equipment at an attractive price with the Heptagon Uto series.
The blades of your kitchen knives have a structure called San Maï. This is a blade with a hard core surrounded by a softer layer for added protection and optimum balance. There are therefore 2 different steels superimposed in 3 distinct layers (the top layer is split by folding around the core).
These Kanetsugu knives feature a core of Japanese VG2 steel, invented by well-known steelmaker Takefu. This is a stainless steel with a carbon content of around 0.7%, giving it appreciable rigidity (the average for a good Western knife is around 0.5%). This steel also contains around 14% chromium, making it more resistant to corrosion. Blade hardness is 58HRC on the Rockwell scale, so you can easily maintain its sharpness.
A softer layer ofstainless steel surrounds the core to protect it and give it greater flexibility (in the sense that the blade is more resistant to blows).
At the bottom of the blade, you can make out the superimposition of the steel layers: there's a fine wave with random patterns running the length of the cutting edge.
The surface of the blades is hammered to bring contrast and originality to your knives. Finishes are satin-finished for the finest effect!
The handles of these Japanese knives are made from pakka wood (also known as pakkawood). This is a material composed of resin and laminated wood compressed under heat. This material benefits from a natural, wood-like result thanks to the unique veins that are formed. The Bolster are made from the same black material.
These handles are lightweight for optimum maneuverability and a comfortable grip. They have an original ergonomic shape: they are heptagonal and give this name to their range! They have 7 facets, enabling both left- and right-handed cooks to use them.
For optimum care of your knives, we advise you not to soak them in the sink, but to wash them by hand with a non-abrasive sponge and a mild detergent. Once cleaned, wipe them dry immediately to keep them in a dry place.
