Description

The chef 's knife is an essential part of your equipment

The chef's knife is perfect for many types of cutting, whether you need precision or speed! With it, you can chop herbs, slice vegetables or mince meat (without bones) with ease. Because it's so versatile, it's useful for preparing your everyday meals, whether you're an amateur or an experienced cook.

Kanetsugu knives are the result of Japanese expertise

Kanetsugu is a Japanese brand that has been around for several decades, designing its knives in Japan so that you can benefit from Japanese know-how right in your kitchen. The Heptagon Uto range offers kitchen equipment at the best price.

The chef's knife features a San Maï blade structure. It is built with a hard core that is surrounded by a softer layer that folds in on both sides of its surface: this provides optimum balance while protecting the core. There are therefore 2 different types of steel in 3 layers (as the top layer is split when folded).

The core of this knife is made of VG2 Japanese steel. This is a stainless steel invented by the renowned steelmaker Takefu. This steel contains around 0.7% carbon to give your knife ideal rigidity (the average for a Western knife is 0.5%). It also contains around 14% chromium to improve corrosion resistance. Its hardness on the Rockwell scale is 58HRC, making it easy to sharpen.

The core is coated with a layer of softer stainless steel to protect it, but also to give it greater flexibility, making your knife more resistant to impact.

The alloying of the different steels can be seen on the bottom of the blade: there's a fine wave with random patterns that emerges along the cutting edge.

For a quality finish, the blade is satin-finished and its surface has been hammered to give an original contrasting effect to please cooks!

The handle of this knife is made from pakka wood (also known as pakkawood), a blend of resin and laminated wood that gives it a natural look. Unique veins are present and can be likened to wood. The bolster of your Japanese knife is made from the same material, in black.

The ergonomic handle ensures an optimum grip! It's lightweight and comfortable for controlled handling. The handle has a special shape, with 7 facets: it's this heptagonal shape that gives the range its name. What's more, it's ideal for both right- and left-handed users!

To care for your knife, do not soak it in the sink, but wash it with a sponge and mild detergents. Wipe dry immediately and store in a dry place.
