Description

Nakamura is a Japanese company founded in 2015, initially set up as an artisan workshop. Its ambition is to bring together Japan's best blacksmiths and sharpeners to give birth to knives that are as aesthetic as they are high-performance. To promote this expertise, the Kaishin (魁心) brand was created."Kai" (魁) means "pioneer", while "Shin" (心) evokes "spirit". It's this innovative spirit that drives Nakamura Kaishin to design exceptional Japanese knives!

This yanagiba is the fruit of the expertise of Shogo Yamatsuka, a Japanese blacksmith from Sakai. Born into a family of craftsmen, he learned the art of blacksmithing from an early age, working alongside his father. A specialist in Ginsan steel, Yamatsuka-san passed on to him all the secrets of this top-of-the-range alloy. Determined to follow in his father's footsteps, Shogo devoted almost 30 years to perfecting the technique of hot-forging Ginsan steel, becoming the only blacksmith to fully master this expertise. His talent and commitment have been recognized by Japan's Ministry of Economy, Trade and Industry, which has awarded him the prestigious title of Master Traditional Craftsman.

The sharpening of this knife was then entrusted to the specialists at Fujii Hamono. Under the supervision of Fujii Keiichi, the company uses large grinding wheels to perfect the sharpness of the blades. Thanks to their meticulous know-how and years of experience, these craftsmen ensure that your knife cuts with exceptional precision.

A Japanese knife with elegant damascus

This yanagiba knife features a 27cm damascus blade. Its structure is based on a hard steel core, surrounded by several layers of softer steel to protect it. This process gives the blade an excellent balance: the rigid core guarantees a long-lasting cutting edge, while the outer layers provide a certain suppleness, reducing the risk of breakage during use.

What's more, damascus is not only functional, it's also aesthetically pleasing! The superimposed layers of steel form unique patterns on every Nakamura knife. On this handcrafted Japanese knife, the damascus is very subtle, adding an extra touch of refinement.

The heart of your blade is made of Japanese Ginsan stainless steel, also known as G3 or Silver 3. This carbon-rich alloy, with a carbon content of around 0.95%, ensures optimum hardness and rigidity, enabling the cutting edge to stay sharper for longer. Thanks to its 13.5% chromium content, it also boasts excellent corrosion resistance. With a hardness of 59/60 HRC on the Rockwell scale, it is easy to maintain: a simple stone sharpening is all it takes to restore its original edge!

The cutting edge of your Japanese kitchen knife is asymmetrical, like most yanagiba knives. This knife is therefore designed for right-handed use, enabling you to cut thin, even slices in a single movement.

Each blade is embellished with hand-engraved kanji representing the name "Kaishin". This handcrafted detail reinforces the authentic and unique character of your Japanese kitchen knife.

A magnolia handle for this exceptional knife

This Japanese knife features an octagonal handle, designed for an ergonomic grip. Its shape makes it suitable for the hands of all cooks, guaranteeing optimal comfort even during prolonged use in the kitchen!

The handle is made from magnolia wood, a precious species prized for its strength and natural resistance to humidity thanks to its high density. Each piece of wood features unique variations of light hues with varying degrees of grain and veining. This distinctive character makes every kaishin knife unique!

A bolster forms the transition between blade and handle, reinforced with wood pulp for optimum watertightness. Made from white buffalo horn, a natural material, it adds a touch of uniqueness to your damascus knife. Its elegant color further enhances the aesthetics of your handcrafted knife!

To care for your damascus knife, wash it exclusively by hand, using a soft sponge and non-abrasive soap, and avoid getting the handle too wet. After washing, dry immediately with a clean cloth and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
