Description

This Japanese all-purpose knife offers great versatility for a variety of cutting tasks! Its small blade is ideal for work requiring great precision, whether you're preparing fruit and vegetables or making decorations. Practical and efficient, this knife is an indispensable ally in the kitchen!

The Glestain M Series range of kitchen knives has been specially designed to meet the needs of all cooks, whether professional or amateur! These Japanese knives stand out for their high-quality cutting edge and ergonomic design, offering an optimal cutting experience and saving time in the kitchen.

High-performance cutting edge for this Glestain knife

The blade of this Japanese knife is crafted fromACUTO440 stainless steel, offering exceptional corrosion resistance and durability. This alloy, frequently used in the manufacture of Glestain knives, is composed of carbon, chromium, molybdenum and vanadium.

Carbon, as a key element, plays a crucial role in increasing the blade's hardness, thus promoting an efficient cutting edge. With a hardness of around 59HRC on the Rockwell scale, this blade ensures exceptional edge retention, guaranteeing optimum cutting performance.

Molybdenum and vanadium also play an essential role in the alloy's hardness. Vanadium not only increases the alloy's elasticity, but also enhances its impact resistance. As for molybdenum and chromium, they contribute to corrosion resistance, ensuring the blade's longevity.

The steel used in this Glestain knife offers an optimum combination of efficiency, durability and strength. What's more, it's easy to maintain with a whetstone, ensuring consistent performance.

To ensure outstanding sharpness, this knife has been subjected to Sub Zero tempering. This technique involves cooling the blade to extremely low temperatures after the heating phase, reinforcing the alloy's rigidity and creating a fine, homogeneous structure. This procedure considerably reduces the risk of blade breakage during use. Glestain carries out this tempering process in 7 stages, requiring precision and time.

The blade's convex cutting edge also contributes to its effectiveness! Thanks to this shape, the blade penetrates food more easily, guaranteeing clean, precise cuts.

Last but not least, the blade of this Japanese knife ishoneycombed, preventing food from sticking to the sides during cutting!

This Glestain Japanese knife is original

The handle of this Japanese knife is made of solid, durable stainless steel. Its original design adds character to your Japanese kitchen knife, while ensuring optimum sturdiness. The handle also features a stainless steel bolster that balances your knife for an ideal grip!

It's Western-shaped to suit the widest range of cooks! Your Glestain knife offers an ergonomic grip and perfectly controlled handling, ideal for prolonged use in the kitchen.

To care for your Japanese utility knife, wash only by hand with a soft sponge. Once cleaned, wipe immediately with a clean cloth before storing in a dry place. Do not put it in the dishwasher, nor leave it to soak in the sink.

About the Glestain brand

In 1971, highly qualified engineer Akira Honma founded the Glestain knife brand with the aim of fusing science and cutting-edge technology to achieve optimum performance. To raise brand awareness from the outset, Glestain adopts a direct approach, targeting restaurants and chefs. This strategy enables us to gather valuable feedback from kitchen professionals, so that we can continue to improve Glestain knives.
