To guarantee exceptional sharpness, this Japanese knife has undergone Sub Zero tempering. This technique consists of cooling the blade to extremely low temperatures after the heating phase, reinforcing the alloy's rigidity and creating a fine, uniform structure. This procedure reduces the risk of blade breakage during use. Glestain applies this tempering process in 7 steps, requiring precision and time.
