The sashimi knife with a high-end blade
This knife features a 21cm blade with a San Maï design, a typically Japanese structure. The rigid steel core is surrounded by a layer of softer steel that protects and balances the core.
The blade core here is made from Japanese SLD steel produced by the world-famous steelmaker Hitachi. Originally used in toolmaking, its fine grit and excellent mechanical properties quickly opened the doors of the cutlery world to SLD steel.
Its pure composition is remarkable: with a carbon content of around 1.6% (whereas the average in cutlery is between 0.5 and 1%, depending on the blade and the manufacturer) and a chromium content of almost 12.6%, this combination gives the blade great hardness, making it easier to sharpen and clean, while maintaining high corrosion resistance thanks to the chromium. The result is a steel with high resistance to wear and torsion.
The blade reaches a hardness of 62 HRC, giving you a high-performance cutting edge that lasts. You save on sharpening sessions.
The core is then surrounded bya layer of softerstainless steel sandwiching it, to increase its resistance to corrosion, protect it and give it flexibility, making it less susceptible to breakage. A randomly undulating line along the cutting edge marks this top layer.
This knife is forged, which means it's made from a single solid piece of steel. This technique avoids excessive welding or sticking points, ensuring optimum strength and balance to the knife.
Finally, the blade features the brand's engraved logo. You've got an authentic Japanese knife!
An elegant walnut wood handle
This sashimi knife features a handle made from walnut, a precious wood that is highly resistant to moisture, preventing warping and ensuring long life. Its warm color is highlighted by a unique veining, and the handle has an elegant appearance.
The handle has a comfortable oval shape that fits comfortably in your hand, whether you're right- or left-handed. You can use the knife for long cutting sessions without the risk of fatigue due to repetitive gestures.
A stainless steel bolster completes the handle, linking it to the blade. This bolster gives your knife excellent balance.
A few words on the brand and knife care
Made from top-quality steel, this Japanese knife should be washed by hand, excluding soaking in the sink or putting in the dishwasher. Use a soft sponge and washing-up liquid, avoiding wetting the handle. Once washed, dry the knife immediately before storing it in a dry place.
