Description

Kei Kobayashi: the craftsman of sharpness

Kei Kobayashi is a blacksmith based in Seki, a hotbed of knife and cutting utensil design, who started out as a precision sharpener. He founded his own workshop in the early 2000s, inspired by the great masters he had worked with.

Kobayashi san is renowned for his expert use of SG2 steel, which he handles in both damascus structure and San Maï (simplified 3-layer damascus). His exacting standards are evident in every detail of his knives: from the precise tempering line to the edge finish.

Kobayashi knife excellence in a compact format

This handcrafted Japanesebunka-style Kobayashi knife captivates with its handy 17cm format, high-end damascus blade and undeniable elegance. Carefully forged in Seki, Japan, by the talented craftsman Kei Kobayashi san, it will quickly become a kitchen staple for everyday cuts. Its versatility makes it all the more important.

A fine, formidable SG2 damascus blade

This handcrafted Japanese knife features a 17cm blade, ideal for a wide variety of cuts. Its SG2 steel core, a Japanese powder steel manufactured by Takefu Special Steel, contains around 1.3% carbon, giving it a hardness of 63 HRC on the Rockwell scale. This high hardness ensures excellent edge retention.

The damascened structure reinforces the SG2 powder steel core by adding several layers of mild steels that alternate on top. This traditional technique gives the blade added strength, while offering a truly unique visual. Each wavy pattern is different from one knife to the next.

Although SG2 steel contains chromium to improve its resistance to corrosion, this carbon knife requires precise maintenance to preserve its qualities over the long term (we give you all our advice below).

A comfortable handle with a singular design

The handle is made of deep-red varnished pakka wood, a highly resistant composite material, a blend of compressed wood and resin. It is stable over time, withstands humidity and thermal shock.

Cut in a unique heptagonal shape, it naturally fits the palm of your hand, ensuring a secure grip. This original design, combined with the damascene blade, lends the whole a bold, pleasing style.

Easy maintenance to ensure optimum durability of your knife

Wash the knife immediately after use, by hand, with a soft sponge. Dry thoroughly before storing away from moisture. Avoid at all costs the dishwasher or prolonged soaking in the sink. For a consistently impeccable edge, sharpening on a Japanese stone is recommended.
